About Monica:

I’m Monica Schiller, PA-C, a certified physician assistant with a bachelor’s degree in nutrition, a Beyond Celiac Ambassador, and a support group facilitator with the National Celiac Association. My work and advocacy are rooted in both medical training and personal experience. When my daughter was diagnosed with celiac disease, I quickly learned how overwhelming those first few months after diagnosis can feel.

That experience inspired me to create Gluten Is Not For Me, an effort to make life after diagnosis clearer and more approachable for families and communities. Over time, this has grown into education and outreach with schools, healthcare professionals, and local organizations, including serving as the Allergy and Food Sensitivity Liaison at my daughter’s school, helping bridge the gap between clinical information and real-world living.

Through restaurant assessments and collaborations, community engagement, and national partnerships, I continue to support awareness and education around celiac disease. My goal is to make gluten-free living safer, simpler, and more inclusive for anyone who needs it, whether that’s a newly diagnosed family, a restaurant team, or a teacher hoping to make their classroom more welcoming.
