About Monica:

As a celiac mom and PA-C, Monica Schiller understands firsthand how overwhelming life can feel after a celiac diagnosis. When her daughter was diagnosed, she stepped into the gluten-free world not only as a medical professional, but as a parent navigating fear, confusion, and the steep learning curve so many families face in those early months.
​
Monica is a certified physician assistant with a bachelor’s degree in nutrition, a Beyond Celiac Ambassador, and a support group facilitator with the National Celiac Association amongst other roles. Her work and advocacy are rooted in the combination of her medical training and lived experience caring for a child with celiac disease.
​
That journey inspired her to create Gluten Is Not For Me, an effort designed to make the transition after diagnosis clearer, safer, and more approachable for families and communities. Over time, this has expanded into education and outreach with schools, healthcare professionals, restaurants, and local organizations. She also serves as the Food Allergy & Sensitivity Liaison at a local school, where she works to strengthen inclusion and safety for all students.

Through restaurant outreach, community engagement, and partnerships with celiac organizations, Monica continues to support awareness and education around celiac disease. Her goal is to make gluten-free living safer, simpler, and more inclusive - whether for a newly diagnosed family, a restaurant team improving their practices, or a teacher hoping to create a more welcoming classroom.
